Buffalo Chicken Dip

Buffalo-Chicken-DipBuffalo Chicken dip is a great appetizer for either a party or a pre-dinner snack or for any occasion really. It feeds several people and tastes so good. I’m not a spicy person, I don’t really even like buffalo wings, but I love buffalo chicken dip. Stew Leonard’s has really good buffalo chicken dip if you don’t want to make it yourself. If you want to make it from home you take 8oz. of softened cream cheese and add half a cup of Franks Red Hot, or your favorite hot sauce. Then add a quarter of a cup of blue cheese, or ranch whichever you love, and mix together in a sauce pan over medium heat until cream cheese is melted and mixed together. Then add shredded rotisserie chicken or canned shredded chicken and mix it all together. Then put in the over until it’s hot and bubbly and it’s ready to go. It is always a popular snack with any type of chips whether it’s a tortilla chips, or a potato chip or even a pretzel.

Bark

10836449_10153394757008452_1254014273_nEveryone has their own bark recipe, it a super easy thing to make for a large crowd and always tastes so good. I’m learned about this bark from one of my mom’s friends at my brothers tailgate and fell in love with it. I ended up making it as a dessert t bring to a party I went to. You have to line a cookie sheet with tin foil and put Premium saltines down next to each other to the entire sheet is covered. Then melt 2 sticks of butter in a saucepan and mix in 2 cups of brown sugar. Once that is ready you can pour it over the saltines and bake it in the oven at 325 degrees for around 10 minutes or until it starts to bubble. Then pour 2 packages of semi-sweet chocolate chips on top and put it back in the oven for a couple minutes so they melt and spread them on top for the coating. Then you can sprinkle eminems on tops and put it in the freezer until you can rip the wax paper off so around 4 hours. I just let it sit in my garage for 4 hours and it was good to go. If you decide to break up the bark before taking the tin foil off you’ll have to take it off the individual pieces which I can’t imagine is very fun. Overall this is a great dessert recipe especially for a large crowd that I highly recommend!

Halloween Perks

Pillsbury Pumpkin Shape Cookies BakedFirst of all, Happy Halloween! There are so many perks to Halloween; the candy, the costumes, even the parties. I love all of those things but my favorite aspect of Halloween is the Pillsbury cut out pumpkin cookies. They come pre-made and all you have to do is pop them in the oven for 8 minutes. They’re best served with a cup of milk but be careful because they are lethal. There are 24 in a package and you will eat all of them if you let yourself. They’re that good. There are so many fun recipes to use these cookies with. I would highly recommend you go get your package of pillsbury pumpkin cut out cookies and eat them today while it is still acceptable. Diet starts tomorrow, so I will enjoy myself today!

Chocolate Milkshake

IMG_8422A chocolate milkshake can be the perfect dessert. I’m big on desserts and when people say they have a sweet tooth I laugh because all my teeth are sweet teeth and chocolate is something that I consider a necessity in my everyday life. When it comes to milkshakes and ice cream it’s a no brainer that it has to be chocolate. I used Breyers chocolate ice cream which is around 5 dollars depending on where you go. I used Hood Fat Free Milk so I felt a little better about myself for drinking a whole milkshake and blended it all together in a single cup blender which is a really awesome investment and is around 20 dollars.  I added whipped cream to the top and at the store I saw pumpkin shaped Reese’s so I decided to grab a couple for my roommates and I. Its a easy dessert and is really good depending on what you do to it. I wish I had chocolate sauce to make it extra chocolatey and maybe even some cherries to put on top, but overall it was really good. I try not to make them too often but when I do they never let me down.

Stir Fry

IMG_8420Stir Fry is easy to make whether you want to eat it for your dinner or have it as a side or save it for later and have it as leftovers. It can be made a bunch of different ways and you can basically add whatever you want to it. For my stir fry I added broccoli, peppers, onions, garlic, water chestnuts, and chicken. For the sauce I added Tsang Teriyaki Stir Fry Sauce and I put it in the vegetables and chicken and also added a little to the rice so it had flavor too. I used the same rice that I used for my chicken dinner post. I chose to have it for dinner along with my favorite fall drink, apple cider. The great thing about stir fry is that it is inexpensive to buy the ingredients for, it takes about 20 minutes to cook and 10 minutes to cut everything up and depending on what you add to it and how much sauce you put in, it can actually be a pretty healthy meal. The best dinner options are ones that are cheap easy and good for you. Stir fry is a great meal to make if you’re looking for those options and want to be able to eat a dinner where everything is combined and eaten together.

Oatmeal for breakfast

IMG_8297Oatmeal for breakfast sounds really boring. It usually is boring if you don’t spice it up. This morning I was in a rush so I threw together a bowl of Quaker Old Fashioned Oatmeal  that only takes 2 minutes to microwave and is pretty cheap. In order to make this meal taste better I added one of my favorite fall fruits, sliced apples. To make it sweeter I put some cinnamon sugar on top but sometimes I like to use honey because it is better for you than sugar. Now that it is the fall season you could even add some pumpkin spice. On top I put a dab of peanut butter because I like to add peanut butter to everything I can. It adds a lot of flavor to anything you add it to. This meal took me less than 5 minutes to throw together and kept me full until lunch time. If you have a couple minutes in the morning you should definitely take sometime to make yourself breakfast because it is an essential part of your day and diet. Oatmeal is a great breakfast meal to make when your in a rush and can be really good if you spice it up!

Coffee is a necessity

IMG_8226Coffee is vital in college. Some people prefer energy drinks and some people don’t like caffeine at all. In my days at college I need coffee to survive. On the Springfield College campus you can choose between Dunkin Donuts and Starbucks. I’m impartial, I don’t have one that I like more, but Starbucks is right next to my building where Dunkin is all the way across campus, so I usually settle with Starbucks, as I did this morning. I also have a Keurig, which in the long run could save you a lot of money, and is easy to make coffee with but I can never make it as good and Starbucks or Dunkin does. I went over at 8:30 this morning expecting there to be a line, there was no line so you can imagine my excitement knowing I don’t have to impatiently wait to get my coffee. I can honestly say I’m pretty cranky until I have coffee in my hand.

The best part about Starbucks and Dunkin this time of year is they have their pumpkin flavors. I love pumpkin everything. So when the fall season rolls around I won’t miss out on getting my pumpkin coffee. This morning I happily ordered my favorite pumpkin spice latte from Starbucks. Now on top of it being early in the morning I also have classes until 5:15 so this will be getting me through my day, and I may even have to go back to get another one at some point.

When you’re a college student juggling 5 classes, 2 clubs, and all the work that comes with all of those on top of having a job, it is important to have something that keeps you going. Whether it is coffee, or an energy drink it’s crucial to have that little something that keeps you going. If you’re one of those people who doesn’t need any type of caffeine to get you through the day, I envy you and you rock. But for people who are like me who can’t get through your day without a pick me up, I recommend at least a cup of coffee per day. I definitely recommend the pumpkin spice latte from Starbucks, but if you’re trying to save some money there is nothing wrong with sitting down and making yourself coffee. It really only takes 5 minutes. As I sit here and drink my coffee, I know there are college students everywhere getting their coffees to get them through this day and all the future college days to come.
