Garlic Chicken

IMG_8638-0.JPG Garlic is one of my favorite flavors so any chance I get I try and incorporate it into my meals. I tried this amazing dinner with sautéed chicken and spinach over pasta with garlic and I added a decent amount of pepper. I found the recipe online and decided to try it out. It went really well. Used the chicken nugget size chicken that you buy at the store and cut those in half to sautée them and added a bag of spinach with the 6 cloves of garlic. I put it over Ronzoni vegetable pasta and I added parade an cheese and coconut oil for a light sauce to it had some flavor. I’ve been cooking with coconut oil a lot lately because it’s better for you than butter and I think it tastes good. This recipe is a great one if you’re looking for something on the healthier side. You can also substitute the pasta with broccoli and it would be even healthier.

Sunday Pasta Dinner

IMG_8459I know I post a lot of dinner posts, but it’s my favorite meal and I try to make a variety of different things. Tonight I made pasta with a meat sauce and added chicken to it. I used Barilla penne pasta and the meat sauce I used was homemade by one of my roommates moms which we thawed out and warmed up and it tasted as if it was made right then. I just used Perdue Crispy Chicken Strips which you throw in the oven for 16 minutes and then I cut 3 of them up and mixed it all together. We also made a couple of mini pizzas. We cut English Muffins in half and added Prego traditional sauce to it and them and added shredded cheese to it and cooked them with the chicken strips. They’re a fun little way to make a side or if you wanna just make them as a snack or how ever you want really. Not to mention they’re pretty good and taste just like pizza. I also had a cup of apple cider, which I mentioned before is my favorite fall drink and heat to have with any meal. Pasta is always an easy dinner to make and because I grew up in an Italian house hold, it was usually what we had for dinner on Sundays (also because it’s the only thing my mom knows how to make). Overall though, it was really good and definitely hit the spot!

Stir Fry

IMG_8420Stir Fry is easy to make whether you want to eat it for your dinner or have it as a side or save it for later and have it as leftovers. It can be made a bunch of different ways and you can basically add whatever you want to it. For my stir fry I added broccoli, peppers, onions, garlic, water chestnuts, and chicken. For the sauce I added Tsang Teriyaki Stir Fry Sauce and I put it in the vegetables and chicken and also added a little to the rice so it had flavor too. I used the same rice that I used for my chicken dinner post. I chose to have it for dinner along with my favorite fall drink, apple cider. The great thing about stir fry is that it is inexpensive to buy the ingredients for, it takes about 20 minutes to cook and 10 minutes to cut everything up and depending on what you add to it and how much sauce you put in, it can actually be a pretty healthy meal. The best dinner options are ones that are cheap easy and good for you. Stir fry is a great meal to make if you’re looking for those options and want to be able to eat a dinner where everything is combined and eaten together.

Chicken Dinner

Tonight I decided to eat healthy by making chicken served over brown rice with vegetables. As much as I love to eat everything that is bad for me, it’s nice to switch it up and have some healthy meals. I was looking through Pinterest at healthy dinner meals and stumbled upon a ton of great things to make. Tonight I started off by marinating the chicken in lemon juice and basil for an hour. I IMG_8323cut up carrots, green beans, and broccoli to throw in the mix. I bought brown rice and made 2 cups of it, which was way to much for three people. I sautéed the chicken and then added the vegetables while cooking the rice. I also chopped up some lettuce and cut up extra carrots, celery and tomatoes for a salad.

Overall it took me about 20 minutes to actually cook all of it and the ingredients together was under 20 dollars. These meals are the best kinds to make as a college student because they’re really good for you and very cost effective. Had I not been feeding three people it would have been around 10 dollars but because it ended up being more than just myself it came to around 16 dollars. I would definitely recommend a meal like this at least once or twice a week as a college student to make sure your diet stays balanced.

Tacos Tacos Tacos

IMG_8299Tonight for dinner I decided to make my roommates Tacos. Taco night is definitely something I recommend if you have a couple people you’re eating with and you want to make something easy and tasty. It’s not the healthiest dinner, but it can be made into a vegetarian meal by substituting the beef with beans, black or pinto. I went to the store and bought the Old El Paso 18 tacos shells which was less that 3 collars and then Old El Paso taco seasoning that costs less than 2 dollars. It’s easier than buying the whole kit and saves you a couple bucks. I got a pound of beef, lettuce, tomatoes, nacho blend shredded cheese and sour cream. Overall I spent around 20 dollars in total which wasn’t bad since I was feeding myself and my 4 roommates.

After getting all the things I needed, I made the beef first while warming up the shells. In total making the meal only took about 10-15 minutes, but I also had people helping me cut up the lettuce and tomatoes. Warming up the shells takes around 7 minutes and cooking the beef takes about 15. It’s really an easy process and definitely pays off. I also made my own guacamole dip by smashing up 2 avocados and adding a little lemon juice and garlic salt. If you’re looking for an easy meal to make that’s relatively in expensive I would definitely recommend having a taco night!
